Pork Guisado for 25

5 lb., 10 oz. lean pork, cubed
2 tbls. vegetable oil
1 3/4 cup onion, chopped
1 3/4 cup bell pepper, chopped
5 cloves garlic
4 cups cabbage, shredded
jalapeño to taste, seeded and chopped (optional)

Brown in heavy skillet until meat is brown and onion transparent.

2 3/4 cup chopped tomato
2 tsp. salt
1 tsp. black pepper
1 3/4 tsp. cumin
1 3/4 cup water

When meat is brown, add. Simmer, covered, for 20 minutes.

2 ½ tbls. corn starch
2 tbls. water

Stir together, then stir into mixture to thicken.
